Badass Beef Sauce for Stews and Goulashes

Roux Ingredients


  1. How to make Bad Ass Beef Sauce

    Brown the beef, set aside and remove grease from the pan.

    Melt 4 Tablespoons of butter in the pan and add the garlic and red onion. Let sauté at medium heat until the onions and garlic are nice and glassy.

    Add the Carrots, Sherry and Paprika and mix together for 2 minutes. 

    Add the Bouillon, Worcestshire sauce and Rosemary twigs and bring to a boil. If you are using a beef that needs to cook long, then add it now. Once Boiling, lower heat to low, cover and allow to simmer.

    Make a roux - Add 3 Tablespoons of butter to a small pan and let it melt. Add the same amount of flour and mix together until you have made a nice paste. Now add a little milk and mix all together into a nice thick paste. Add this to the Beef Sauce and mix it in well.

    If you are using a tender piece of meat that doesn't need to cook long add it when you have about 10 minutes left to finish the sauce.

    Add salt and pepper to taste.

    Its ready! 

    Let the Beef Sauce simmer for at least an hour, add some more water or even some sherry or red wine to keep it from drying out. 

    If you are using a beef that needs to cook long then you should keep cooking until the beef is softened to the texture you like.
