It’s the day after Christmas and my wife and I are walking in the forest. Blue skies, fresh air, and the swiss alps stretched before our eyes.
And I’ve got some Yams. I’m thinking about yams and what I’m going to do with them. I also have fresh Cilantro in the fridge. How about an herb butter? Ya! Add some lime! Ya! Garlic? No it will be too dominant. Hmmm……. How about some roasted pecans? I always make Grandma’s sweet molasses yams for Thanksgiving which didn’t happen this year due to Covid, so that’s probably where that idea came from.
So I made it that night but in the haste of cooking and preparing everything, I forgot the pecans. It must have been the family Zoon at the same time, that made me forget. Good Excuse but how would it have tasted?
Anyway I am glad I forgot because the family used the butter on everything! We had herb marinated Pangasius filets and beef sirloin strips slightly marinated in a soy/olive oil with black sesame seeds. We had a hot stone so everyone grilled for themselves and added the butter. It was great on everything but definitely best on the fish.
I’m going to try Cilantro Lime Butter one day with those roasted pecans! I just think it will be for some vegetables. Either Potatoes, Yams or Broccoli? Those are definitely 3 likely candidates.
If you make some, you can keep it in the fridge for more than one meal. For sure 3-4 weeks. Great stuff!
Cilantro Lime Butter
Cilantro and Lime are combined with melted butter and then chilled into a roll shape. Then it can be cut easily with a butter knife and used as a topping for so many things!

How to make Cilantro Lime Butter
Soften the Butter. This can be done quickly in the microwave. But not too much! Just so it starts melting on the sides and is nice and mushy soft
Add to a bowl with other ingredients and mix well.
Place bowl in refrigerator for 10 minutes so it hardens a bit.
Take out of bowl and place on cutting board to shape into a log.
Wrap in cellophane and put back in refrigerator to harden.
