Holy Guacamole!

Guacamole is a great appetizer with amazingly fresh taste. Why? Because everything you put in guacamole is fresh! The main ingredients are avocado, onion, cilantro,limes, garlic, tomatoes, and salt. There are no dried herbs or processed ingredients. Its all pure natural stuff folks!

Guacamole originates from the ancient Aztec Indians. It was a main food for them. Apparently when the Spaniards came, they took it home with them. But today, it is not something one easily finds in Spain. It has become a staple dish in Mexico and the USA. In California, which was once owned by Mexico, hispanic culture is fully integrated into the California Dream. Guacamole is huge as is all mexican food.

You should really customize it the way you want. There is really no best or authentic guacamole recipe. Thats a bunch of total Bullshit. OLÉ! As they say in Spain! You are in charge, not the bull! You make the best!

What is important is that you use a lot of fresh Avocados. You mash them up in a bowl (but keep it chunky!), then you add onions, cilantro, chopped tomatoes, garlic, lime juice and chili peppers.

How spicy and which peppers you use, is your call. Jalapenos, serranos, pepperoncini, habaneros to name the ones most people use.

White onion is preferred by many including myself, but you can use problemlos brown or red.  You can really tell the difference between a Guac made with white, brown  or red onions. Pretty interesting that the onion comes out so strong, so be careful how much you add.

Lime juice can be substituted with lemon juice but this is a bit of a shame. Limes are more acidic and less sweet and this combination goes better in Guac. You are looking for a tangy, flavorful taste with a small or big punch (depending on the spice level) not something sweet.

Cilantro is as critical as Avocado. It is a must. Use lots of it. And chop it up with the stems. They have lots of taste and vitamins.

Now back to our lovely avocado. That bastard doesn’t stay fresh long! The next day he is already brown from oxidation. Like a hangover, enjoyed the party too long and not looking so fresh the next day. Here are some tips to keep left over guacamole for a few days but best is to just eat it all up. Avocados are good for you! They are fatty but it is the good fat, saturated fat

And last but not least, the word is fun to say and people have created alot of funny puns with it.

And then there is the phrase Holy Guacamole! Which is a nice way of saying something is a really good surprise, a nice shock of disbelief. Much nicer to say than holy shit or holey cow and sounds better too.

How to make authentic Guacamole

  1. Smash it up!

    Cut and remove the avocado from their skins and add to a bowl. This is very easy to do by first cutting in half, removing the pit, and then scooping out the avocado.

    Mash the avocados up in a bowl. You can actually just use a large fork. No need for potato masher as some suggest. 

    Add the juice of one lime and mix well into your chunky avocados.

    Add all the rest of the ingredients.

    Mash it up! Keep mixing with the fork, pressing down on the mixture to mash the avocados until you get the texture you are looking for. It should be chunky and have really nice colors from the red chilies, white onions, and cilantro.

    Taste and adjust the salt if necessary.

    It is ready!
