Pasta with Goat Cheese and Tomatoes

Goat cheese is made in a wide variety of styles, from soft fresh cheese to hard aged cheese. For this dish you should use a soft goat cheese. Goat cheese is high in protein (health benefits of goat cheese).

Tomatoes can be either from a can or bottle of tomato sauce, hacked tomatoes, or can be fresh. If you go with fresh ones, either blend them into a sauce or finely chopped them.

Pasta with Goat Cheese and Tomatoes

  1. Chop the onions and mince the garlic.

    Add the Olive Oil to the pan with the onions and garlic and sauté at medium heat until soft and glassy.

    Add the tomato sauce and let cook for 10 minutes at medium heat.

    While it is cooking, start cooking the pasta.

    Add the Goat Cheese and let it melt into the sauce.

    Add the Oregano, Basil, Salt, and Pepper. 

    Finish cooking the pasta and add as much of the  pasta water as needed to make the right consistency. Don't skip this step! It really makes the sauce one level higher on the taste meter!
