If you are making Pineapple Salsa, then it must be summer!

“It sure been a hard winter, and my feet been draggin cross the ground.” Mick Jagger sings this in their song titled ‘Winter’. And this is what came to mind when I made this refreshing and tangy salsa loaded with fresh pineapple just as winter was going away. It means for sure winter is over and summer is out there playing around. You could be frolicking on a tropical island or just kicking it in the backyard grilling for family and friends. It doesn’t matter cuz if you got some pineapple salsa, good vibes will be shining bright. Jagger continues with “and I hope its gonna be a long hot summer, and a lot of love will be burning bright”. He’s got that right.

This salsa goes great with pork and fish recipes. Either one coming off a grill at dusk on a summer night is going to be divine with this salsa as a condiment. How about a glass wine with that! It is also fantastic as an appetizer with tortilla chips

  1. Cut the pineapple into small pieces of the same size. You can view this video to learn the best way to cut a pineapple:

    Add to a bowl

    Add the garlic, ginger, red bell pepper, red onion, cilantro, and mint.

    Add the lime juice and mix well

    Add the salt and cumin to taste.
