Once the fish is ready, spread out some fresh greens on a plate or just some rocket. Then dazzle a little lemon juice on it. Now put one of those freshly fried Pistachio Filets and some Truffle Gnocchi and you are set. Well almost! You need some white wine! Enjoy!

How to make a Pistachio Crusted Fish
Making the Pistachio Crust
Add all the ingredients for the breading together in a food processor and then let it rip. Make sure the pistachios and ground well enough. If they are too chunky, they do not stick to the fish as well. So grind them pretty good.
Preparing the Fish
Now you want to set up your assembly line to bread the fish.
Put the flour first on a plate.
Then the eggs (well mixed) in a shallow bowl.
Then the Pistachio Crust mixture
And Finally the casserole for the fish to rest.
Coat the filets one by one
- First coat with the flour
- then roll in the eggs
- then cover completely with the Pistachio Crust
- Lay to rest and pick up the next Filet.
- If you have time, it is good to let the fish rest a bit to assure a good hold of the crust before you fry. You can even put in the refrigerator for half hour
Fry those Babies
Heat some Oil in a pan at medium low heat. You can use olive or a vegetable oil. Then add the fish and start frying. I prefer to fry not so hot so it is easier to control. Let the fish cook for 5 minutes and then flip em. Be careful - you do not want to damage that lovely crust!
