Sweet Potato Yams casserole with molasses, maple syrup and walnuts is always a big hit at thanksgiving with my family. Its the one dish where I never seem to have any leftovers!
It is definitely on the sweet side and I think that is what makes it so perfect for a thanksgiving feast. Along side stuffing, mash potatoes, gravy, and peas, you create real delightful mix of tastes to accompany your juicy succulent turkey.
I like to use a mixture of molasses and maple syrup and you can vary this as you like. You can make it only with molasses or only with maple syrup, but I think a mixture of half half is better.
What is molasses?
Molasses is the dark, sweet syrup made during the extraction of sugars from sugarcane and sugar beets. During the sugar-making process, juice extracted from sugarcane or sugar beets is boiled down until the sugars crystallize and precipitate out. The syrup left over after crystallization is referred to as molasses. Typically, sugar cane juice undergoes three cycles of boiling and crystallization to extract as much sugar as possible. With each successive cycle, the leftover molasses contains less sugar. Molasses can vary in color, sweetness, and nutritional content depending on the variety or how much sugar has been extracted.

How to make a sweet potato casserole, delicious very sweet yam side dish
First peel all the yams and boil them until they are soft when you put a fork in them.
Drain and let cool.
Melt the butter.
Combine the molasses, maple syrup, brown sugar, and butter in a large bowl. Mix well.
Once the yams are cool, start slicing them the long way into nice little circles. Place two layers in the casserole dish.
Now sprinkle some crushed walnuts on top.
Repeat this until the casserole dish is full. Then top with a lot of walnuts
Pour the molasses mixture over the top.
Place in the oven and cook for 45 minutes at 180 degrees Celsius (350 F).
Let cool and serve!
